You can taste the flavors of fresh white fruits such as white grapes and lychee, as well as the sweetness of fruits like the Meigetsu variety of green apple and Satsuma mandarin. The impression of ripe fruit has a sweetness reminiscent of dried fruit, and the smooth, viscous texture unique to the honey process is pleasant, with a floral finish reminiscent of elderflower.

Gito means "small." This lot consists of only the densest beans from a selection of A1 grade beans that would have otherwise been sorted for domestic consumption due to their small size. The availability of Gito beans, which were previously hidden within the screen size standard, will lead to increased supply to the specialty coffee market for producers, improved profitability for CWS (Coffee Producers System), and better living conditions for farmers.
This Gito is made from A1 grade cherries from four CWS (Coffee Welding Stations) in Nyamasheke, western Rwanda. Each cherry is processed at a washing station and collected in a dry mill in dry parchment form. It is then sorted by screen size, with only those measuring 13-14 being collected together. Less mature beans are removed by color sorting, and defective beans are thoroughly removed by hand sorting. Finally, density sorting is performed to select coffees that are small in screen size but have a high density.
