■ FLAVOR COMMENT

It features the fresh flavors of white fruits such as white grapes and lychee, the sweetness of Meigetsu apples, and citrus notes reminiscent of Satsuma mandarin oranges. The impression of ripe fruit carries the sweetness of dried fruit, while the smooth, viscous mouthfeel unique to the honey process is pleasant, culminating in a floral finish evocative of elderflower.

■ INFORMATION

Gito means "small." While these beans are A1 grade, they are smaller in size and were originally intended for the domestic market; this lot consists only of those with high density. Making Gito available—which has previously been hidden within screen size grading standards—leads to an increase in supply to the specialty coffee market for the origin, improved revenue for the CWS (Coffee Washing Stations), and a better quality of life for the farmers.

This Gito is composed of A1-grade cherries from four CWSs in Nyamasheke, Western Rwanda. The cherries are processed at each washing station and collected at the dry mill in the form of dry parchment. They are separated by screen size, and only those between 13 and 14 are collected, then passed through color sorting to remove less ripe beans, followed by thorough hand-sorting to eliminate defects. Finally, density sorting is performed to carefully select high-density beans despite their small screen size.
