It offers delicate notes of green apple, orange, and blackberry, with a syrupy, very soft mouthfeel and a gentle acidity. The fruitiness and sweetness evoke prunes, yellow peaches, and mangoes, while the finish leaves a savory aftertaste of roasted nuts and caramel, with subtle hints of herbal and floral aromas. It's a well-balanced and appealing drink that leaves you feeling calm and relaxed.

■ INFORMATION

Franklin was born into a family of coffee farmers. His grandfather, Constantino Madrid, was the first person to plant coffee in the village of El Sauce. Since then, the farm has been passed down from his grandfather to his father, who increased production capacity, acquired other farmland, and expanded coffee cultivation. Today, Franklin and his brothers manage their respective farms independently while also working together to operate them.

Franklin is the successor to the "Patepluma" farm, named after the local nickname for the people of Santa Barbara. Blessed with exceptional microclimates and locational conditions, the farm has strived to maximize its potential for quality. As a result, it won the Honduran Cup of Excellence (COE) in 2008.

Denilson, the son, has been involved in this family tradition since childhood. He graduated last year from university with a degree in agriculture, and is now putting his knowledge into practice on his father's farm. He is expected to be a key figure in this generational shift and a future leader.

The coffee cherries are carefully harvested when fully ripe, and the pulp is removed the following morning. The parchment is then placed in fermentation tanks for 20 hours of dry fermentation. After fermentation, it is washed three times with large amounts of water. Next, it is dried on drying racks in a greenhouse for approximately 22 days. During drying, defective beans are sorted by hand.
