■ INFORMATION
Carlos has been involved in his family's coffee farm activities since birth, learning a great deal from a young age. His grandfather bequeathed the current land to his mother, and six years later, it was passed down from his mother to Carlos.
Despite being young and inexperienced, he inherited a farm with an excellent environment. However, this would not have been possible without the continuous support of his uncles. His uncles taught Carlos how to cultivate Pacas and Parainema varieties, special coffee processing methods, and how to connect with San Vicente and specialty buyers.
For this lot, cherries are hand-picked when fully ripe and placed in barrels for 48 hours of fermentation. Afterward, they are pulped at the family's wet mill, and the parchment with the mucilage still attached is placed back into barrels for another 48 hours of dry fermentation. Next, it is washed twice using a large amount of water. After that, it is dried on drying beds for about 20 days.
