The acidity is soft and gentle, with tropical flavor notes reminiscent of green apple, orange, and mango. The fruitiness of stone fruits like cherry and yellow peach, combined with the rich sweetness suggestive of prunes, is truly captivating.

You can also enjoy the smooth texture of hazelnut and a pleasant, sweet caramel finish. This is an exceptionally well-balanced lot, perfect for everyday drinking.

■ INFORMATION

Angel is a third-generation coffee producer who has been involved in coffee processing at the San Vicente wet mill since childhood and has been working with specialty coffee producers for the past 15 years. In 2007, he purchased his first plot of land to establish a coffee farm; he planted the entire area with Red Catuai that same year and named the farm "La Colmena."

He began coffee production in 2009 and exported his first micro-lot intended for the specialty coffee market. Angel has been participating in the "Cup of Excellence" since 2011 and has earned numerous significant awards since then. In 2018, he purchased another plot of land in El Dorado, Santa Barbara, where he planted various coffee varieties. The first coffee from this farm was produced in 2021, and five years later, it continues to produce high-quality, consistent coffee.

The cherries for this lot are carefully harvested and transported to the wet mill. Each afternoon, after pulping, the mucilage-covered parchment is placed into plastic barrels for a 72-hour anaerobic fermentation process. Afterward, the parchment is washed four times with plenty of water in tanks. It is then spread out on concrete patios to dry for approximately 15 days.
