Finca Limoncillo is located in Matagalpa, in northern Nicaragua. With its meticulously managed fields, bamboo groves, and waterfalls, the farm has the atmosphere of a garden.

The producer is also actively committed to environmental protection, maintaining 54 hectares of tropical rainforest—about half of the farm's total land—and generating renewable energy through a hydroelectric plant on-site.

Finca Limoncillo began cultivating Bourbon in the 1990s. While this variety lacks resistance to most pests and diseases and yields less than modern improved varieties, it remains in use for its approachable flavor and high cup quality. This research-oriented farm also uses this essential variety as a primary sample when testing new initiatives.

The reason for the farm's consistently high-quality coffee lies in the combination of variety and terroir, backed by the farm's high standards and technical expertise.

For this natural process coffee, only fully ripe cherries are selected through flotation after harvest. They are then carefully moved to the dry mill and dried on tiered netting on a patio for five days, followed by 28 days in a greenhouse to reduce the moisture content.
