The tropical impression is reminiscent of ripe mango and lychee, with the rich sweetness and fruitiness of fresh and soft La France, stone fruit yellow peach, and Kyoho grapes. Luis took over the long-standing export business Las Segovias in Nueva Segovia, northern Nicaragua, from his predecessors. While he runs the drying facility and export business, he has also purchased several farms and is involved in coffee production as a producer.
Lewis explains why he started the farm: "The quickest way to understand how producers feel is to become one of them." By combining his experience in farm management and as a copper farmer, he has accumulated a wealth of know-how, which he not only applies to his own farm, but also actively provides advice to neighboring producers.
He has won numerous awards at international competitions, including the Cup of Excellence, and has been crowned Nicaraguan Champion twice, but he remains humble and believes all of his achievements are a gift from God, and even now that he has established himself, his passion for producing higher quality coffee knows no bounds.
La Vendición is the largest of his farms, and is divided into about 11 plots, each with its own caretaker. The harvested cherries are hand-sorted, stored in a cool environment for a certain period of time, and then slowly dried in the shade for about 40 days. During this time, the cherries are constantly stirred to prevent over-fermentation and uneven drying, and after drying, they are hand-sorted again before being shelled.
