Doi Pang Khon is a coffee-producing region located in the mountainous area of Chiang Rai Province in northern Thailand, and is one of the most famous coffee origins in the country. This area is home to ethnic minorities such as the Akha and Lahu people, who have been cultivating coffee for generations.
Inthirit is an Akha farmer who is also fluent in Chinese. Having grown coffee for a long time, he began converting parts of his farm to organic cultivation a few years ago due to concerns about the environmental impact of pesticides and chemical fertilizers.
Located on the mountainside, the coffee is planted on slopes where leguminous shade trees like Calliandra and Dadap are grown. Above the farm, pine trees are densely planted, which helps maintain the mountain's water retention capabilities.
Kenya-style washed processing involves fermenting the parchment without water after the fruit pulp is removed (primary fermentation). Once the mucilage has been partially broken down, the parchment is washed with clean water and then fermented again (secondary fermentation). During this stage, the parchment is soaked in clean water until the mucilage is completely removed. Using this method improves the clean cup and elevates the distinct flavors of the Catimor variety. The coffee is dried on African beds, and then moved to lower elevations for final drying.
