■ FLAVOR COMMENT
Along with rich fruit flavors reminiscent of ripe cassis, dark cherry, and prune, you can also perceive juicy notes like blackberry and blood orange. It features a sweetness accompanied by a pleasant bitterness similar to bitter chocolate, as well as a rich, molasses-like sweetness and a creamy mouthfeel.
The lingering, calming herbal aroma is also captivating. We are pleased to offer this medium-dark roast of the Kent variety from Acacia Hills Farm. Please enjoy comparing the flavor profiles created by the different roast levels compared to the light roast.

■ INFORMATION
Following last year, we are pleased to present the Kent variety from Mr. Leon’s Acacia Hills Farm again this year. For this season, we have been able to procure the AA grade rather than the AB grade.
Within 10 hours of harvest, fresh, ripe cherries are sorted by density, pre-washed, and then depulped using a drum pulper with mountain spring water.
Fermentation is carried out as a dry fermentation process using covered concrete tanks (in contrast to the submerged fermentation method adopted in Kenya). Fermentation time varies depending on the variety, ripeness of the harvested cherries, and uniformity, but generally ranges from 36 to 40 hours.
The end of fermentation is determined by touching the fermenting coffee (wet parchment feels gritty, and while the mucilage layer is thick, it has a clean aroma).
Fully fermented coffee is washed in sufficiently long washing channels until all mucilage is removed. During washing, parchment of lower density is sorted again, resulting in four types of coffee: parchment 1, 2, 3, and floaters.
The washed parchment coffee is dried on shaded drying beds and under direct sunlight. After an initial drying period of 5 days, it is dried slowly for the remaining 10 days while the parchment is turned frequently.
