It has a bright citrus acidity reminiscent of orange and grapefruit, and stone fruit flavors such as apricot and cherry. The juicy sweetness is also accompanied by the gorgeousness of red apple nectar.
It has a gentle sweetness reminiscent of brown sugar, as well as a calming floral nuance reminiscent of herbs.

This is the lot from Leon that we purchased last year as well. This year, we were able to purchase a new crop that has improved in quality.
The harvested cherries are first sorted in the field, then transported to the washing station (mainly in the evening) to remove the pulp. They are then open fermented for 12-13 hours, and when they are well fermented, the coffee is turned to check the fermentation level. They are then washed, separated from the floating matter, and graded into P1 and P2.
The parchment is dried on a drying rack for approximately 13-16 days (depending on the weather) until the parchment reaches a moisture content of 12% and then sent to a warehouse.
We have implemented several measures to improve the quality of our coffee, and we pay close attention to every step of the process, from harvesting to drying and storage. We also limit the coffee cherries we grind to those that are fully ripe, shiny red, or deep red. These detailed efforts allow us to provide our roasters with high-quality coffee.
