The flavors are reminiscent of sweet oranges and blackberries, with a soft fruitiness like apricots and yellow peaches. The smoothness of the liquid, which can be felt from the fermentation process, and the slightly viscous mouthfeel give off a sweetness reminiscent of molasses and chocolate. The aftertaste is also characteristic of a rooibos-like verbal finish and a lactic acidic taste.

This batch is special, and coffees with unique characteristics were selected. When tasting this coffee at the lab in the region, people looked at each other and burst into smiles, as if they were saying 'wow!', hence the name "Carnival."

The high and fertile hills of Cajamarca are ideal for growing specialty coffee, and this coffee has a unique flavor that cannot be found anywhere else.The reason for this is the fermentation process, which requires a longer fermentation time than other batches of green beans.

Celso and Delma have contributed greatly to this special lot, and in 2010 Delma's brother began planting at higher elevations, influencing neighboring growers to do the same.
Today, Celso and Demla own a 3 hectare farm and produce some of the best quality coffee in the area.

In addition to coffee cultivation, Cajamarca in Peru is also famous for its Carnival, which takes place every February and is one of the most anticipated and enjoyed festivals in the country. Initially, it was just a celebration among family and acquaintances, but over time it has grown and become even larger. Today, the Carnival is held in the main street of Cajamarca Plaza and lasts for several days.
