■ INFORMATION
Finca El Porvenir is a coffee farm located in the San Fernando district of Nueva Segovia, northern Nicaragua, along the border with Honduras.
The name "El Porvenir" means "the future" in Spanish. There is even a sign at the entrance to the farm that reads "未来" (future) in Japanese, reflecting the depth of meaning behind the name. Sergio is not only a producer but also a highly skilled Q Grader (coffee quality grader). He utilizes scientific soil analysis and unique, advanced fermentation and processing techniques to pursue cutting-edge coffee production. He is a fantastic producer who has also placed in the Cup of Excellence (COE).
The Java variety introduced here originates from Ethiopian landrace coffee. It is an ancient Arabica variety that spread to the world from the island of Java, Indonesia, in the 18th century, and has recently been gaining significant attention. It is characterized by its long-berry shape, where the green beans are elongated.
This lot is a honey-processed coffee that underwent 24 hours of anaerobic fermentation in the cherry and 24 hours of aerobic fermentation in the parchment.
