Limoncillo Farm is located in Matagalpa in northern Nicaragua. The carefully maintained bamboo forest, waterfalls, and coffee trees give it a garden-like feel. This beautiful farm opened in 1930 and cultivated only Typica until the 1970s. Currently, each variety is thoroughly managed, and in addition to the Bourbon variety introduced here, they are cultivating a wide variety of coffee, including Javanica, Pacamara, and Catuai.

This farm is actively working to improve working conditions, setting up a nursery school, elementary school, and clinic, and providing free meals to children during the harvest season. In addition, as a rule, it prohibits any discrimination and takes voluntary action to address human rights issues.

The producer is proactive in protecting the environment, such as by protecting 54 hectares of rainforest, which is about half of the farmland, and producing renewable energy at its own hydroelectric facilities. Bourbon is one of the most famous and essential varieties in the world.

Limoncillo Farm began cultivating this variety in the 1990s. It is not resistant to almost all diseases and pests, and its yield is lower than that of improved varieties. Nevertheless, they continue to use Bourbon because of its familiar flavor and high cup quality. In addition, when this research-oriented farm takes on new challenges, they first use Bourbon as an experimental sample. The reason they are able to produce consistently high quality coffee is due to the combination of the variety and terroir, and the farm's high level of awareness and technology.
