Finca El Limoncillo is located in Matagalpa, in northern Nicaragua. With its meticulously maintained fields, bamboo groves, and waterfalls, the farm has the atmosphere of a garden.
The producer is actively committed to environmental protection, maintaining 54 hectares of rainforest—about half of the farm's total area—and generating renewable energy via an on-site hydroelectric power plant.
Finca El Limoncillo began cultivating Bourbon in the 1990s. This variety is vulnerable to almost all pests and diseases and yields less than modern improved varieties. However, the reason they continue to use it is for its approachable flavor and high cup quality. Furthermore, this research-driven farm uses this essential variety as a sample for experimentation whenever they undertake new challenges.
The reason for their consistently high-quality production lies in the combination of variety and terroir, backed by the farm's high standards and expertise.
For this natural process, only ripe cherries are selected via flotation after harvest. They are then carefully moved to the dry mill and dried on netted layers on the patio for 5 days. Finally, they are moved to a greenhouse where they are dried for 28 days to reach the target moisture content.
