■ FLAVOR COMMENT

The herbal notes of rosemary and sage, along with a subtle earthy aroma, are characteristic of Mandheling, while the flavor reveals hints of grapefruit, green mango, and green apple.

■ INFORMATION

This coffee comes from a producer in the Porun district, near Tobago in northern Sumatra, Indonesia. In this region, home to over 1,000 coffee growers, the producer is so highly regarded by the locals that they say, "This is the best coffee."

Alfina and Julia, siblings from Rumbangaol, were born into a family that ran two processing plants in that region. From a young age, they frequently visited coffee farmers in Porun to purchase high-quality parchment.
When farmers encountered difficulties in cultivation or business management, they would wholeheartedly work to resolve them. Because of this dedication and their kind personalities, high-quality cherries began to gather around them, and before long, the two of them grew to be known as "collectors." Today, they partner with over 170 small farmers and are an indispensable part of the development of the coffee community in the Porun district.

To produce the highest quality coffee, high-quality cherries are essential as the raw material, but meticulous processing afterward is also crucial. In the Sumatra processing method, where the parchment is removed while the moisture content is high, the soft beans can sometimes split at the tip due to the force of the mill. These split parts are prone to quality deterioration, and removing them is difficult with machine sorting; the only way is by hand picking. For this product, skilled pickers check the green beans on the conveyor belt and remove each one individually .
Even with Mandheling coffee, which is usually considered a specialty coffee, the hand-picking conveyor belt is typically used only once, or at most twice. However, with this product, there is no limit to the number of passes; hand-picking continues until the beans meet strict standards, thoroughly removing any defective beans.

Thus, the Seribraja coffee, born from the hands and time of many people, lives up to its name as a high-quality coffee. This is the first time we've offered Indonesian coffee in a while. Please enjoy it.
