This coffee has a flavor like ripe apples and oranges, with a rich, sweet fruitiness reminiscent of yellow peaches, prunes, and dried fruits, and a pleasant, smooth finish like milk chocolate.
The various flavors found within its delicate impression are characteristic of a lot produced by combining Pacas and Bourbon varieties. Please enjoy the flavor created by the prestigious Madrid family from the Santa Bárbara region of Honduras.

Carlos has been involved in his family's coffee farm activities since birth, learning a great deal from a young age. His grandfather bequeathed the current land to his mother, and six years later, it was passed down from his mother to Carlos.
Despite his youth and lack of experience, he inherited a farm with an excellent environment. However, this would not have been possible without the continuous support of his uncles. His uncles taught Carlos how to cultivate Pacas and Parainema varieties, methods for processing specialty coffee, and how to connect with San Vicente and specialty buyers.
This lot features cherries hand-picked when fully ripe, then placed in barrels for 48 hours of fermentation. After that, they are pulped at the family's wet mill, and the parchment with mucilage still attached is returned to barrels for another 48 hours of dry fermentation. Next, they are washed twice using a large amount of water. Afterwards, they are dried on raised beds for about 20 days.
