Angel is a third-generation coffee producer who has been involved in coffee processing at the San Vicente wet mill since he was young and has worked with specialty coffee producers for the past 15 years. In 2007, he purchased his first plot of land to establish a coffee farm, planting Red Catuai across the entire property and naming it "La Colmena."
He began coffee production in 2009 and exported his first micro-lot for the specialty coffee market. Angel has participated in the "Cup of Excellence" since 2011 and has since received numerous prestigious awards. In 2018, he purchased another plot of land in El Dorado, Santa Barbara, where he planted a variety of coffee cultivars. The first harvest from this farm took place in 2021, and five years later, he continues to produce high-quality, consistent coffee.
The cherries for this lot are carefully harvested and transported to the wet mill. Each afternoon, after depulping, the parchment with its mucilage layer is placed in plastic barrels and undergoes anaerobic fermentation for 72 hours. Subsequently, the parchment is washed four times in tanks using plenty of water. It is then spread out on a concrete floor and dried for approximately 15 days.
