■ FLAVOR COMMENT
It has a gentle and mild floral aroma, and the flavor is reminiscent of green apple and grapefruit. Overall, it's a coffee with a strong impression of sweetness, with the impression of stone fruit like a perfectly ripe apricot, and a pleasant Japanese taste in the aftertaste. The balance of sweetness and texture is beautifully expressed in this Geisha variety.
■ FLAVOR NOTE
Green Apple, Grapefruits, Apricot, Earl Grey
■ INFORMATION
El Piñal Farm is a family-run farm established 22 years ago. It is dedicated to cultivating valuable coffee varieties such as Geisha, Pacamara, Maracaturra, and Pacas. Prior to its establishment, Don Abel spent nearly 20 years planting over 1,000 hectares of coffee, receiving expert advice. However, 23 years ago, he seized the opportunity to purchase his own land. In the charming town of Monjas Xalapa, he has dedicated himself wholeheartedly to cultivating exceptional coffee.

The key to El Piñal's exceptional coffee quality lies in the active involvement of the entire family throughout the entire process. From harvesting to rigorous quality control and meticulous storage, every member of the family plays a vital role in delivering the finest coffee.
El Piñal has been a family business since its founding, with everyone participating in some way in picking, processing, quality control, drying, and storage management. Cherry harvesting on the farm is carried out according to a strict Brix meter with a minimum of 18-20% (a Brix meter is a refractometer for fruit, reading the sugar content as a percentage of the total liquid being tested).
After harvesting, the cherries are transported to the farm's processing plant, where the pulp is removed, they are fermented overnight, and then transferred to the farm's African beds where they are dried for about 10 days.
