Only perfectly ripe cherries are harvested by careful handpicking.
The cherries are transported by the growers to the wet mill where they are then dried. They are evenly distributed on African beds and slowly dried, stirring occasionally, until they reach the correct moisture content.

The coffee varieties in this lot are common in the Guji zone, varieties 74110 and 74112. These varieties were developed by the Jimma Agricultural Research Center (JARC) in the 1970s and are resistant to coffee berry diseases.
Variety 74110 was selected from a "mother tree" in Bishari village, Il-Ababola Zone, Metu District, Oromia Region. After studying the resistance of the coffee berry to diseases and overall yield, JARC introduced the variety in 1979. 74110 trees tend to be short and compact, with small leaves and relatively small cherries.
Variety 74112, also native to Metu-Bishari forest, was similarly evaluated for its disease resistance and yield potential and was introduced in 1979.
