The fresh, lemon-like citrus flavor captures the essence of an Ethiopian washed process coffee above all else. It features clear fruit impressions reminiscent of white peach, cherry, and white grape, balanced by the gentle sweetness of brown sugar and a subtle, ginger-like spiciness. You can also enjoy a pleasant, lingering aroma similar to Darjeeling tea, along with a light-bodied liquid and a soft, smooth mouthfeel.

The lot we are introducing this time was produced by Nigussie Gemeda Mude, the winner of the 2020 Cup of Excellence. The Chire Washing Station (WS) is the largest facility owned by Mr. Mude and is equipped with processing technology capable of producing both natural and washed coffees.
Quality control under Mr. Nigussie began in 2022, and the washing station maintains strictly set quality standards. Year by year, local smallholder farmers are deepening their understanding of quality. Only fully ripe cherries are hand-picked, and efforts are made to collect them promptly without delay.
At the washing station, the cherries are pulped, and the mucilage is removed through wet fermentation. After being washed in channels, the coffee enters the drying process on African beds, where it is sun-dried for approximately 14 days.
