EL SALVADOR | Raul Rivera

■ FLAVOR COMMENT
It features ripe white grapes, red apples, and refreshing lemon citrus flavors. The viscous texture unique to the honey method is felt along with the fragrant sweetness of honey, and the soft fruitiness of stone fruits such as prunes and white peaches and the elegant, floral aftertaste are also impressive. The clean and transparent taste firmly supports the overall outline. Please enjoy this exquisite cup created by Raul, who can be said to be the pinnacle of the Pacamara variety.

■ INFORMATION
We would like to introduce you to Santa Rosa Farm, owned by Raul of Chalatenango, an area known worldwide in the coffee industry as producing high-quality Pacamara coffee. Raul is a representative producer in El Salvador who has continued to achieve good results in various competitions, including winning the COE three times.
He basically only cultivates the Pacamala variety, which grows in the beautiful forests surrounded by pine trees and takes time to ripen, storing up a lot of organic acids and producing a rich flavor.

For this honey process, the honey was fermented in tanks for 24 hours after harvesting, and then pulping began. The lot was then dried for about 20 days in African beds, with some sunlight and some shade.
