■ FLAVOR COMMENT

It has a refreshing taste reminiscent of white grapes and oranges, and a sweet and sour flavor like raspberry.
It also has impressions of tropical fruits like pineapple and juicy plums, and you can enjoy its complex acidity.

It features a juicy liquid and a smooth, pleasant texture, as well as the smoothness and sweetness of bean-to-bar craft chocolate.

■ INFORMATION

This coffee comes from a small but excellent farm in the El Túnel area, located in the hills of La Palma City in the Chalatenango Department in northwest El Salvador. Oscar is the nephew of Rene Aguilar, the famous producer who popularized Pacamara in this area. With his support, he has been producing excellent coffee even at a young age.

This Geisha comes from a plot that has been cultivated for about eight years, with roots firmly rooted in the soil, and a bright flavor that clearly emerges. While the coffee is grown using the traditional natural process, the high altitude of the refinery and the chilly nights cause a slight spontaneous fermentation during the early drying stage when the moisture content is high, resulting in the development of complex flavors.
