■ INFORMATION
Oscar is a producer introduced to us this season by Chapolera, a regional trading company based in Pitalito. While many in this area are selling off their farms, he has acquired a new farm in the southern part of Huila, separate from the one he has been working on in the north.
We were deeply drawn to his decision and attitude, and it naturally aligned with our belief that we want to "take the time to build relationships with young producers who will carry the future of these origins," which led us to start trading with him.
The coffee we are introducing this time was born right on that new farm. On Oscar's farm, processing is carried out using a consistent method. The cherries undergo 24 hours of pre-fermentation, followed by 24 hours of fermentation with water in cement tanks. After the mucilage is washed off, they undergo a further 24 hours of dry fermentation before moving on to the drying stage. The lack of next-generation successors is a serious social issue in the coffee industry.
Oscar shared the following with us:
"There are almost no other producers of my generation around me. When I was a child, I was told to study hard so I wouldn't have to become a coffee farmer." On the other hand, he also said, "As specialty coffee has spread, the situation has gradually changed. Because the social status of coffee farmers has risen and high quality is now required, the knowledge learned in universities—such as agricultural science, chemistry, and engineering—is now being put to use in the coffee industry. As a result, the younger generation who have gained an education are returning to the world of coffee."
The existence of exotic, high-priced coffees like Geisha and Pink Bourbon allows producers to take pride in their work, find fulfillment, and earn the income that serves as the foundation for their lives. We have witnessed this truth time and again at origin. Conveying and spreading the value behind this to roasters and drinkers in Japan is exactly why we handle so many exotic varieties and why we believe it holds such great significance.
