COLOMBIA | Oscar Tobar

■ FLAVOR COMMENT

This coffee boasts bright and vibrant notes of fresh white grapes and mandarin oranges, complemented by tropical hints and the intense sweetness of fruits like apricot, golden kiwi, and mango. You'll also detect a subtle lactic acidity and a delicate sweetness reminiscent of demerara sugar.

The juicy and pleasant body, characteristic of the Caturra varietal, envelops a gentle acidity and sweetness. This is a classic Colombian washed coffee you'll never tire of, even if you drink it every day.

■ INFORMATION

Oscar is one of the producers introduced by Chapolera, a regional trading company based in Pitalito. While many in the area are selling off their farms, Oscar acquired a new farm in the southern Huila region, in addition to the northern Huila farm he had been working on. His determination and attitude deeply impressed us.

At the same time, the importer's desire to build long-term relationships with young producers who will shape the future of coffee production naturally aligned with Oscar's vision, leading to their collaboration. The coffee we are introducing this time is from this very new farm.

Oscar and the importer consistently discussed future replanting. When Oscar asked for advice on "what varietal would be best for building a long-term relationship," Chiroso and Caturra were suggested as candidates.

When the importer next visited the farm, 10,000 Chiroso seedlings were already being cultivated. It was striking how Oscar had taken their conversation to heart and moved forward decisively with the next step.

At his farm, processing is generally carried out using a consistent method.

The cherries undergo 24 hours of pre-fermentation (natural fermentation), followed by 24 hours of fermentation with water in cement tanks. After washing off the mucilage, they are fermented dry for another 24 hours before proceeding to drying.

During cupping for purchase, Oscar's Caturra left a strong impression with its rich fruitiness and clean profile. We are very pleased to be able to offer it to you all.
