BURUNDI | Karambo Washed

This wine boasts a fresh and vibrant citrus flavor reminiscent of lemons and oranges, along with fruity notes of red apple, plum, and apricot. The delicate sweetness, similar to brown juga, and syrupy texture are delightfully pleasant. Its clean, floral character is also characteristic of Burundi's washed-process wines.

The Karambo Washing Station (WS) began operations in 2021. It is located in Muinga, in northeastern Burundi, near Ruvubu National Park, amidst beautiful rolling hills.
We produce coffee in collaboration with approximately 1,000 small-scale producers who own farmland on three hills (Karira, Kiryama, and Masasu).

This workshop's mission is to "bring the highest quality coffee produced in Burundi to the world while having a positive impact on the local community," and it values ​​growing in step with local producers.
As we steadily increase production, we have improved our African drying beds to a two-tiered system this year to further enhance our cherry receiving capacity. Our goal is to focus on quality more than ever before, without being distracted by the receiving schedule.

The cherries brought to the washing station are processed within 6 hours of harvesting, followed by 10-12 hours of wet fermentation in fermentation tanks.
Afterward, the wine undergoes washing in a canal and grading into four stages (A1 to A4) based on specific gravity. It is then air-dried in the shade for 6 hours while still in its wet parchment state and hand-sorted. The drying process takes approximately 28 days. The wine is then finished drying on a two-tiered drying bed, with the lower tier drying until the moisture content reaches 18%, and then the upper tier drying until the moisture content drops to 11.5%. After that, it is moved to a warehouse for resting and finally dried to 10.5%.
