■ INFORMATION
This coffee was produced by Lúdes de Fátima de Súza. Her farm, Sitio São Pedro, is located in the Lambari region of Mantiqueira de Minas, Minas Gerais, at an altitude of 1,125 meters.
Lúdes Fatima is the central figure in a family-run coffee farm. Her two sons and stepdaughter are also involved in coffee production. Her son, Thiago, lives and works with her on the farm.
The younger generation in this family has a strong interest in the fermentation process and is making various efforts to add further value to coffee while receiving training.
Harvesting typically takes place from June to September, with the peak season being July. Farmers pay meticulous attention to temperature control while monitoring Brix levels (sugar content) and pH levels.
In addition to African beds (elevated drying racks), we also utilize patios and hot air drying boxes for drying, ensuring that each batch is treated appropriately.
