It has a refreshing flavor like citrus bergamot and lemon, and an aftertaste with an aroma reminiscent of Earl Grey tea. It has a clean and light mouthfeel, with a smooth sweetness reminiscent of honey and brown sugar, and a fruity taste like white peach. You won't get tired of the taste even if you drink it every day. It is a clean and gorgeous washed Ethiopian coffee.

INFORMATION

The Halo Washing Station we are introducing this time purchases cherries from about 170 small farms in the surrounding area. The average farm size is 0.5 to 2 hectares, and they are located at an altitude of 1,925 to 2,110 meters. The washing station is located in a place that is easily accessible from all the farms, which allows for a significant reduction in the transportation time of cherries.

The cherries are harvested and sorted by the individual farmers. After sorting, the farmers sell their cherries directly to the washing station. The sorted cherries are then put through a pulping machine (a traditional Agaarde disc pulper) to remove the pulp. This machine is designed to grade the cherries into high quality G1 and low quality G2 based on density.



The coffee is then fermented underwater in tanks for an average of 72 hours (adjusted between 48 and 100 hours). The coffee is graded again in channels, and the low-quality cherries (those with low density) float and are removed. This separates the high-quality lots with high density. The parchment is soaked with fresh water and then dried on a drying bed for about 8 to 20 days. The coffee is dried in layers of 2 to 8 cm, depending on the climate, the type of table and the drying stage.
