The aroma begins with violets, followed by flavors reminiscent of tropical fruits such as mango and passion fruit, as well as red-purple fruits such as pomegranate, raspberry and grape, creating a complexity that is unique to this variety and process.

You can enjoy the jammy, caramel-like texture and sweetness of the fruity flavors, which are concentrated with the sweetness of dried mango and dates. It has the chocolate and nutty impressions from the Brazilian terroir, and also has a beautiful aftertaste that is characteristic of the Geisha variety.

The "AMA Project" is an initiative to promote the Geisha variety grown in Brazil, and was born in collaboration with World Barista Champion SaSa Sestic and Luiz Paulo, a long-time partner of Brazilian Carmo Coffee producer. The project focuses on the richness of flavors that the Geisha variety can produce in the Brazilian terroir. It seeks out the "pearls" that lie within the terroir.

Through repeated trial and error and careful processing techniques, we were able to discover pearls with rich colors that combine the Geisha variety with the Brazilian terroir. The project name "AMA" comes from "ama," Japanese female divers who dive into the sea to collect pearls.

◼︎About the process

- Fully ripe coffee cherries are hand-picked using a brix sugar meter.
- The harvested cherries are washed in the post-harvest area to prevent unpleasant fermentation and to remove dust and impurities.
-The cherries are placed in a sealed tank, CO2 is injected, and the mixture is allowed to ferment for 3 to 4 days.
- Remove all the cherries from the tank and place them in a dry mill until the moisture content reaches 10-12%.
Once dried, the beans are sorted within the dried cherry pods and placed into waterproof bags until they are ready for milling and shipping.
