ETHIOPIA | Shimekt Daba Washed

It has a rich sweetness reminiscent of ripe American cherries and a flavor reminiscent of dried fruit. It has a full body and rich flavor from the deep roasting, and is pleasant like bitter chocolate. The aftertaste has a mellow, gorgeous impression typical of Ethiopia, and a floral aftertaste like black tea.

■ INFORMATION
Shimekt Daba is a farmer who is passionate about exploring production methods that will bring a better future to Ethiopian coffee-growing communities, regions and the environment.

This farm is located in the Kosa District of the Jimma Zone Lim Region of the Oromia State in southwestern Ethiopia, about 440 km from Addis Ababa, the capital of Ethiopia. Coffee is grown in the tropical rainforest jungle, surrounded by shade trees from the virgin forest and the nutrient-rich reddish brown soil nurtured by the rich leaf humus of the virgin forest.
This farm emphasizes the balance of social, environmental, and economic aspects. They utilize indigenous shade trees and strive to preserve the fertility of the soil in a natural way. Therefore, no chemical fertilizers or pesticides are used, and the farm has obtained organic certification from various countries.

He began to restore his coffee farm in earnest in 2008. He carefully selected coffee varieties based on rainfall, altitude and soil quality, and has since established a reputation as a farm that produces excellent tasting coffee in the Rim area.

In 2016, we built a washing station to select coffee cherries and are working hard to further improve the quality. After removing the cherries using the natural clean water of the Dembi River, which flows from Mount Sekar, a few kilometers from the farm, the coffee is transferred to African beds and slowly dried while being stirred by hand. The resulting coffee has a very delicate and rich flavor.
