The medium-dark roasting gives it a not-too-bitter taste, a pleasant, full-bodied sweetness, and a fragrant aftertaste. You can fully enjoy the fruity sweetness of this coffee, with flavors like American cherries and dried raspberries.

■ INFORMATION

Popayan is surrounded by particularly favorable conditions for coffee production, with volcanic soil rich in nutrients essential for coffee growth, abundant rainfall of approximately 1,600-2,500 mm per year, an average temperature of around 22°C throughout the year, and nighttime temperatures that drop just enough to prevent frost that would damage the coffee.

Unlike the steep slopes of Wila, the relatively gentle plateau terrain allows for well-maintained, stable coffee cultivation, making this an area with high repeatability of flavor from year to year.

This lot will be produced by combining multiple lots from long-established coffee farms with a passion for coffee production in the designated area of ​​the Popayan Plateau in Cauca, particularly in the southern part of the region close to the border with Panama, and will be cup-tested with local exporters.

In Popayan, there is little cultivation of hybrid varieties, which have become common in recent years, and instead the traditional Typica and Castillo varieties are cultivated. Cherries that have been slowly grown in the shade of natural forests are selected and the coffee is dried 100% in the sun, resulting in a high quality coffee that is juicy and deep with a tropical fruit flavor, even among the many lots produced in Popayan.
